Have you ever heard of nicecream? It is healthy ice cream with a base of frozen banana and to which you add other fruits for flavor (or color). Banana provides a creamy, sweet en nutritious base without the need for extra sugar or whipped cream. You could eat this on any summer day without feeling guilty. It is vegan, gluten and lactose free! We choose a tropical variant with mango and coconut.
1 large mango or 2 small ones
1 large banana
½ can of coconut milk
toppings (nuts or fruit)
Cut the mango and banana into pieces and put them in the freezer overnight.
When you're in the mood for nicecream, put all the ingredients in the blender or food processor. Blend until smooth. Too soft? Put it back in the freezer for a while.
Transfer to a bowl and enjoy! You can decorate it with coconut chips, chopped almonds or pecans, pieces of dark chocolate or fruit such as blueberries or raspberries.
